Pahang Patin In Fermented Durian Gravy (Gulai Ikan Patin Pahang)



2 tbsp Fermented durian (tempoyak)
3 Red chilies, finely pounded
6 Bird's eye chilies (cili padi), finely pounded
4 cm knob Fresh turmeric, peeled and finely pounded
1 stalk Lemon grass, bruised
450 ml Water
1.5 kg Patin cut into 3 cm slices
1 Tomato, wedged
1 Cucumber, halved lengthwise and sliced 2 cm diagonally
1 Red chili, slit lengthwise with ends intact
1 Green chili, slit lengthwise with ends intact
1 Turmeric leaf, torn into pieces
Salt to taste




Mix fermented durian, pounded red chilies, bird's eye chilies, and turmeric, lemon grass and water in a pot. Bring to the boil over medium heat. Add fish, tomato, cucumber, red and green chilies, turmeric leaf and simmer until cooked. Season with salt.
