Roast Potato with Minced Chicken Filling (Ubi Kentang Panggang Berinti Ayam)

Ingredients


6 Potatoes
300 g Minced chicken
5 tbsp Soy beans, soaked overnight and coarsely pounded
8 tbsp Olive oil
5 cloves Garlic, peeled and finely chopped
1 tsp Black peppercorns, coarsely ground
3 Onions, medium-sized, peeled and finely diced
Salt to taste
250 g Grated Cheddar cheese
1 tbsp Fresh rosemary, chopped

 

 

 
Method

Boil potatoes with skin until soft. Cut into half and scoop out the flesh into a bowl. Set aside the skin. Combine potato flesh, minced chicken, soy beans, olive oil, garlic, black pepper, onions and salt. Mix thoroughly and fill each potato skin with the potato mixture. Combine grated Cheddar cheese and rosemary and sprinkle over the stuffed potatoes. Place stuffed potatoes on a baking tray lined with greaseproof paper. Bake in the centre of the preheated oven at 180C for 15 minutes until potatoes are cooked.
