Sweet Durian Flavored Glutinous Rice (Wajik Durian)


1 kg Glutinous rice
500 g Granulated sugar
500 g Brown sugar
500 ml Coconut cream, extracted from 2 grated coconuts
2 Screwpine (pandan) leaves, shredded and knotted
250 ml Water
Salt a pinch
500 g Durian flesh




Clean glutinous rice and soak for 6 hours. Drain. Place glutinous rice in a steamer tray and steam for 30 minutes until done. Leave to cool. Put granulated and brown sugars in a pot. Add water and cook over medium heat until sugars dissolve. Strain syrup into a clean pot. Add coconut cream to the syrup. Mix in screwpine leaves and cook until very thick and shiny. Stir in glutinous rice along with the durian flesh. Stir well until dry. Place mixture in a container lined with banana leaf and compress. Let it cool completely before cutting into pieces.
