Tapioca Shoot and Fermented Durian Sambal (Sambal Tempoyak Pucuk Ubi Kayu)


400 g Fermented durian (tempoyak)
2 tsp Fresh turmeric paste
20 Bird's eye chilies (cili padi)
500 ml Coconut milk, extracted from 1 grated coconut and 500 ml water
Salt to taste
8 Shallots, peeled
3 cloves Garlic, peeled
20 seeds Parkia/stink beans (petai)
4 stalks Lemon grass
4 Green chilies
4 Red chilies
500 g Tapioca shoots, leaves only
4 Turmeric shoots, leaves only
6 Pumpkin shoots, leaves only




In a pot, combine fermented durian, turmeric paste, bird's eye chilies and coconut milk and bring to the boil over medium heat while stirring slowly. Simmer for 10 minutes. Add shallots, garlic, parkia/stink beans, lemon grass, red and green chilies and stir well. Add tapioca, turmeric and pumpkin shoots and stir. Season with salt.
